Our opportunity to open a restaurant came in 2019 when we found the perfect location for a small French-style bistro. Our goal was to bring unique, made-from-scratch breakfast and lunch food to our hometown of Rio Rancho, as well as develop a restaurant work culture that centered on professional respect, empowerment, and personal growth. The name comes from our children – their middle names – and in October of 2019 Lily and Liam Bistro officially opened!

Then through the pandemic, lots of things changed, but our focus remained on innovation and quality. In the winter of 2020, the idea of a ghost kitchen in the evenings started to bloom and Upscale Burgers & Shakes was born. The name Upscale comes from our desire to provide a local, upscaled experience to the typical fast food. With a completely different menu concept of burgers, shakes and hand-cut fries, Upscale grew in popularity and eventually outgrew it’s space within the Bistro in the evenings. So in July of 2021, Upscale Burgers & Shakes opened as a brick-and-mortar location in the Cottonwood Mall.

It was fun while it lasted, however, the mall location was just not the fit we were looking for. When opportunity presented itself to move our burger spot to Rio Rancho we jumped at the chance and Upscale Rio opened for business in May of 2023 at 1520 Deborah Rd SE. With Upscale settled and growing in its new home, and the Bistro continuing to gain popularity, we were ready to look at expanding our original Lily and Liam Bistro restaurant concept. And again, the perfect opportunity presented itself…

It has always been a dream to open a restaurant in Corrales, and in the summer of 2023 we started looking at a newly remodeled space inside a former preschool just off of Corrales Road. What evolved is now Belle’s Urban Deli at the corner of Meadowlark and Corrales Road on the very western edge of the Corrales commercial district. Belle’s opened in October of 2023 at 3650 Corrales Rd and offers a full dine-in menu as well as deli menu where guests can purchase freshly cut meats and cheeses, breads, dressings, sauces, and pickled and fermented foods. Belle’s is a sister restaurant to Lily and Liam Bistro and offers indoor as well as outdoor seating. It is also with a shared space with a yoga studio, hair salon, accountant office, and custom wood and fabric art retailer.

With three different restaurant concepts all within close proximity, we are so grateful for the abundance of support from our community! All three locations offer something different, but continue to maintain a focus of quality, freshness, and innovation that we have become known for. Whether it’s dine in, take out, or catering, we are always happy to serve our community and look forward to continuing to innovate and grow in the coming years!
